Easy Greek Flatbread
This simple two-ingredient Greek flatbread is perfect for any meal. Inspired by traditional recipes, it's an easy and quick way to enjoy fresh bread at home. This flatbread is great on its own or combined with a delicious Cypriot Souvlaki for a high-protein meal.

- 500g low-fat Greek yogurt (entire pot)
- 500g Wright's Ciabatta Bread Mix (entire mix)

Method
Step 1: Prepare the dough
- In a large mixing bowl, combine the 500g of Wright's Ciabatta Bread Mix with 500g of low-fat Greek yogurt.
- Mix well with a wooden spoon or spatula until a dough forms.
- Knead the dough for about 5 minutes until smooth and elastic.
Step 2: Shape the flatbread
- Divide the dough into 8 equal portions.
- Roll each portion into a ball and then flatten with a rolling pin to about 1/4 inch thick.
Step 3: Cooking
- Heat a non-stick pan or griddle over medium-high heat. My choice of preference is cooking it on a traditional Cypriot foukou.
- Cook each flatbread for about 2-3 minutes on each side, until golden brown and slightly puffed. The image below shows the different stages of cooking

Serve warm with your favorite toppings or as a side to a traditional Cypriot Souvlaki for a high-protein meal.
